Chicken curd n' cashew delight is a delicacy borne out of a casual experiment. I tried to create a dish with the minimum
condiments I could find and was careful to make it tasty too. If you are
looking for a recipe for a perfect summer lunch, then take my word and try out
this one. Here are the simple INGREDIENTS :
(2) 200 gm of curd.
(3) 12-15 pcs of cashew.
(4) Ginger paste . ( 6 table spoon).
(5) Chili paste . ( 3 chili )
(6) Pepper.
(7) Coriander leaves.
(8) Onion Paste. ( 3 onions).
(9) Garlic paste . ( ½ garlic).
(10) Salt.
(11) Turmeric powder.
(12) Sunflower oil.
As you arrange the ingredients,
let me tell you a trick. Instead of peeling off the outer layer of the onion
directly, boil the onion and garlic in water for 5-7 minutes. Now peel off the
boiled onion and garlic and make the paste. This helps to bring the color of
onion once you cook. For the batter,
take 100 gm of curd and cashew paste and
mix well with ½ tablespoon pepper , the chili paste and 1 tablespoon turmeric.
Be careful enough while using the turmeric powder. Don’t use too much. A light
yellow color is apt for this dish. Let us now proceed on with the chicken. Here
are the easy STEPS :
(1) Marinate the chicken with curd, ginger paste
and pepper for 2- 3 hours.
(2) Heat sunflower oil in pan .
(3) Pour the onion and ginger paste and
fry till the paste becomes golden brown.
(4) Add the salt. ( 1 tablespoon).
(5) Now add the batter of the curd with
cashew, pepper, chili and turmeric.
(6) Stir well for 2- 3 minutes.
(7) Add the coriander leaves and slowly
add the chicken. Don’t add all the pieces at once. Add some, stir for a minute,
and then add some more , so that each piece gets mixed with the gravy.
(8) Add 6 cups of water and let it cook
for 15- 20 minutes.
(9) Turn off the oven . Garnish and the
dish is ready to be served.
